Primo Sale cheese, locally called ‘picurinu’ is undoubtedly the father of all Sicilian cheeses. The shape is cylindrical and regular, without particular discontinuities. When cut, the paste is white as milk with a few holes and an obvious graininess or rather lumpiness.
During the production process, the cheese is aged in small baskets for 30 days, giving the wheels their trademark pattern. Primo sale fresh aroma and is bursting with a sweet milky flavor. Here, spicy peppercorns are folded into the curds for an added kick of flavor and color.
